The K-5 in my signature has dual electric fans. I wired a hi/lo switch on the dash. Run low almost anytime the engine is running (except during extreme cold) have yet to need hi, although it is there. On low, just one fan runs at low speed, on hi both fans run at high speed.
The K-5 is a toy, doesn't tow so it's cooling requirements aren't too bad.
