Low Coolant Light...but full

Whenever my truck is at idle for a long period of time or going uphill with A/C on, it tends to run a little hot (220-230) but cools down rather quickly. Sometimes the low coolant light pops on, but the coolant level is full.

I have a '96 that was purchased in '95.
