How involved is it to remove 2 or 4 clyinders from a 16V71 by removing con rods and injector push rods. Engine is bigger than I need for the application but the attached generator is perfect. Am I biting off too much?

I doubt this is a wise idea - the V-16 crank is balanced statically and dynamically for 16 pistons. Better to swap the 16 for a smaller engine, but that may be hard to do, as I've never encountered a 16 in any but marine applications.
